Raw Fruit Crisp with Chia and Dates

2 pounds fruit, cut in bite size pieces   (frozen work)

1/2 tsp pure vanilla extract
3 Tbsp orange juice, divided
1 cup pitted dates
3/4 cup slivered almonds
1/3 cup chia seeds
1 1/2 tsps. ground cinnamon

 

Toss cherries with vanilla and 2 Tbsps of the orange juice. Spoon into an 8-inch-square dish and smooth the top. In a food processor, combine dates, almonds, chia seeds, cinnamon, and process until coarsely ground. Pour in remaining 1 Tbsp orange juice and pulse until combined. Spoon chia mixture evenly over the top of the cherries and serve, or cover and refrigerate up to 3 days

Avocado Chocolate Pudding & Berries                                                           Serves 4-6

2 Avocados

1/3 c. raw honey or maple syrup

1 tsp. vanilla

dash of sea salt

dash of cinnamon (optional)

½ c. coco powder

 

 

Directions:  Place all ingredients in a blender with honey first & blend until smooth.   I like it with berries

 

Tropical Paleo Fruit Cereal                           Serves 1              

1 cup tropical fruit of choice, chopped (fresh or frozen)

1 oz walnut

1/2 -1 cup full fat coconut milk from a can

5 drops of stevia or to taste

 

Mix, chill and enjoy
