Healthy Easter Meal

Empire Roasted Chicken         Serves 8

About 6 lbs of chicken on the bone
1 Tbsp. lemon pepper seasoning
1.5 Tbsp. dried thyme
Salt and pepper
4 Tbsp. + extra-virgin coconut oil or garlic oil, melted
8 medium carrots
8 celery stalks
2 medium onions
2 large sweet potatoes
7 garlic cloves or 2 Tbsp. garlic powder
1 Tsp. dried rosemary
1 Tsp. dried parsley
1 Lemon

Preheat oven to 425 degrees F. Wash and trim carrots, celery, onion, sweet potatoes (peel) and cut into sticks. Put veggies in the bottom of a roasting pan. . In a small bowl, mix all the seasoning with 4 Tbsp oil. Drizzle half of the season/oil mixture over the veggies and rub 1/2 the mixture in between the skin and flesh of the chicken. Rub the outside of the chicken with oil, salt, and pepper. Place the chicken on the bed of veggies and juice the lemon over the top of everything. Place in the oven and cook at 425 degrees F for 1 1/2 hours or until chicken reaches 155 degrees F internal temperature and the juices run clear.
