Healthy Fruity Citrus Salad To Add To Any Holiday Meal

Fruity Citrus Salad
1 package spring mix or lettuce of choice
1 cup Strawberries, sliced
1 large orange or 2 tangerines, diced
¼ cup almonds, chopped
¼ – 1/3 cup Cranberries or raisins
Options can use apples, pears or other fruit of choice in place of or in addition of strawberries and oranges.
Mix in a bowl.

Citrus Poppy Seed Dressing
2/3 cup olive oil
1 lemon, juiced
1 orange, juiced
¼ cup raw honey
1 Tbsp. poppy seeds (optional)
2 tsp finely chopped onion
1 tsp Dijon mustard
½ tsp salt
In a processor, add the lemon and orange juice, honey, onion, salt and mustard. While the machine is running, drizzle in the oil and blend until it thickens. Add poppy seeds and stir or shake. If you do not have a processor, you can whisk while you drizzle the oil for 3-5 minutes or until it thickens. Refrigerate up to 1 week.
